Frosted Cauliflower

Are you looking for a delicious way to eat cauliflower that is keto friendly and everyone loves? Frosted Cauliflower is the perfect side dish or even a vegetarian main dish. It is so easy to make (especially if you use an instant pot). Our family loves this dish so much I had to start making 2 heads of cauliflower to have enough for everyone!

Using the Instant Pot makes this a super quick recipe but it is still easy to make using the stove and oven instead (which I did for years before getting my instant pot).

Our favorite way to eat Frosted Cauliflower is in a rice bowl but it is a great side dish to just about anything.

FROSTED CAULIFLOWER

Delicious Keto Friendly Side Dish (Or Main Dish for Vegetarians)

Equipment

  • Instant Pot
  • Colander

Ingredients

  • 1 head cauliflower
  • 1 tbsp Fox Point Seasoning
  • 1 ⁄2 c. mayonnaise
  • 2 tsp. prepared mustard
  • 3 ⁄4 c. shredded cheddar cheese

Instructions

  • Place cauliflower head on top of rack or colander in Instant Pot. Add 1 cup of water to the pot. Put the lid on, seal the vent and choose manual for 1 minute. Manually release pressure as soon as the cooking time is finished. Remove lid but leave the cauliflower in the pot.
  • Mix mayonnaise and mustard together. Season the cauliflower with Penzey’s Fox Point (or garlic salt & pepper). Frost cauliflower with mayonnaise and mustard. Sprinkle on cheese. Put the lid back on the pressure cooker, seal the vent and set for 1 more minute.

Notes

Without an Instant Pot:
Steam the whole head of cauliflower until just tender. Frost the cauliflower as directed above.
Bake at 350 degrees for about 10 minutes.
