Breakfast Cookies

Do you need a quick and easy breakfast recipe that is adaptable to what is in your pantry? Breakfast cookies are the perfect choice! Just mix and match whatever ingredients you have on hand to make a delicious and healthy breakfast you can eat on the go. These are nutrient dense and very filling.

This recipe is also a great one to teach the kids how to make since it is almost entirely just mixing the ingredients together. They can learn how to measure, stir and bake with just a little help from you melting the butter and putting the pan in the oven.

We will often pair breakfast cookies with a smoothie for a filling and super nutritious breakfast on those busy days when you just need to get out the door.

Breakfast Cookies

A versatile and easy breakfast cookie

Ingredients

  • 3 Cups oatmeal
  • 2 Cups whole grain flour
  • 1 Cup brown sugar
  • 4 eggs
  • 1 cup butter melted
  • 1 cup mix-ins chocolate chips, raisins, dried cherries, coconut, nuts – I add a variety

Instructions

  • Preheat oven to 350 degrees.
  • Mix all the ingredients together in a large bowl. Form in 1 inch balls.
  • Bake for 12 minutes.
  • Cool on the pan for 1 minute. Then enjoy!
