Birthday Waffles

Waffles are one of our family’s favorite birthday requests! Our family has a tradition of making the birthday person’s request for breakfast and dinner. For birthdays the waffles are served with a favorite topping like raspberry sauce or apple cider syrup and whipped cream.

To make waffles more doable for school mornings I have found that if I invest a little time the night before I have enough time to get it done. I like to set out the waffle irons (I use 2 for my big crowd), measuring cups, and bowls. I go ahead and mix the dry ingredients and just set a plate over the bowl to save it for the morning.

Another great thing about this recipe is that the extras freeze wonderfully. They are easy to heat up for another day!

Belgian Waffles

A filling waffle perfect for special occassions
Prep Time30 mins
Course: Breakfast
Servings: 15

Equipment

  • waffle iron

Ingredients

  • 1 cup butter melted
  • 1/2 cup sugar
  • 4 1/2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 pinch salt
  • 1 cup sour cream
  • 1 cup milk
  • 6 eggs
  • 1 tbsp lemon juice
  • 1 tbsp vanilla

Instructions

  • Melt Butter
  • Heat waffle iron
  • Whisk dry ingredients together in a bowl.
  • Mix sour cream, milk, lemon juice, butter and vanilla in a separate bowl.
  • Add the wet ingredients to the dry ingredients. It will make a rather thick batter. Let rest for 5 minutes.
  • Scoop 1/2 cup batter on heated waffle mold. Cook until golden brown. Repeat.
  • Leftover waffles freeze wonderfully for another day,

Here is our wonderful recipe for Apple Cider Syrup that is perfect for fall! We are blessed that some cousins of mine have an apple press and share their homemade apple cider with us! It is absolutely delicious on waffles, pancakes or French toast.

Apple Cider Syrup

Homemade syrup that cooks quickly and adds something special to your breakfast dishes!
Prep Time15 mins
Course: Breakfast
Servings: 2 cups

Ingredients

  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 tbsp cornstarch
  • 2 tsp Penzey's Pie Spice Mix of cinnamon, nutmeg, mace, ginger, anise seed and clove.
  • 1 pinch salt
  • 2 cups apple cider
  • 2 tbsp lemon juice
  • 1 tsp vanilla
  • 1/2 cup butter cut into pats

Instructions

  • Mix the sugars, cornstarch, spices and salt together in a saucepan with a whisk
  • Pour the apple cider and lemon juice into the pan while continuing to whisk.
  • Cook over medium heat until thickened to desired consistency.
  • Remove from heat and stir in vanilla and butter.
  • Serve warm over waffles, pancakes, or French Toast
